White mulberry is a tree that can reach up to 20 metres in height. It originates from China and has spread to Europe centuries ago, primarily as the food for silkworms. It is resistant to diseases and is thus mostly grown without the use of pesticides. Its fruit (botanically inflorescence) is white, very sweet and sensitive to transport, so it is very unlikely to find fresh white mulberries on sale. Most of the nutrients are retained by drying fresh mulberries on the sun. With drying, the sugar concentrations rise and the fruits become even sweeter.
Dried white mulberries are ideal as a tasty and healthy snack because they have a high percentage (approx. 50%) of natural sugars, mainly glucose and fructose.
