White mulberry is a tree that can reach up to 20 metres in height. It originates from China and has spread to Europe centuries ago, primarily as the food for silkworms. It is resistant to diseases and is thus mostly grown without the use of pesticides. Its fruit (botanically inflorescence) is white, very sweet and sensitive to transport, so it is very unlikely to find fresh white mulberries on sale. Most of the nutrients are retained by drying fresh mulberries on the sun. With drying, the sugar concentrations rise and the fruits become even sweeter.
Dried white mulberries are ideal as a tasty and healthy snack because they have a high percentage (approx. 50%) of natural sugars, mainly glucose and fructose. They also have relatively high levels of proteins for a fruit (approx. 10% when dried) and no fat. Dietary fibre represents about 10%, they aid digestion and prolong the feeling of satiety. They are rich with minerals calcium, phosphorus, potassium, magnesium and with vitamin C, vitamin E (both are strong antioxidants) and vitamin K. They also contain resveratrol, a phenol compound which has an antioxidant and anti-carcinogenic effect; it also soothes different inflammations.
