Yacon is a tall green plant, related to sunflower, that grows in South-American Andes. It blooms with small yellow flowers and its underground parts are used in nutrition. The tubers are crispy, rich with water and have a pleasant sweet flavour. Slices of yacon tuber are juiced into a sweet juice, which is later filtrated and concentrated into a thick syrup of light brown colour. Yacon syrup mainly consists of inulin (65%), a polysaccharide which does not split into simple sugars (monomers) in the small intestine and is not absorbed into the blood directly. Instead, it is split into fructooligosaccharides which do not influence the blood sugar rise. Thus yacon does not need insulin to metabolize and is suitable for diabetics also.

- 1/2 cup hemp milk (or other plant based)
- 1 tbsp chia seeds
- 1 tsp yacon syrup
- handful of goji berries
- handful of cocoa nibs
- 1 ripe banana
- 1 cup fresh blueberries, raspberries or blackberries
Stir yacon syrup, chia seeds, goji berries and cocoa nibs into hemp milk and leave at least 10 minutes for chia seeds to swell. Cut banana into pieces and add it to the chia mixture together with berries or other fresh fruit - delicious and nutritious breakfast is ready.
Oat Bran with yacon
1 cup rice milk (or other plant based milk)
pinch sea salt
¼ cup oat bran
¼ tsp ground cinnamon (optional)
1 tsp yacon syrup
some berries and nuts (optional)
Place water and sea salt in a small sauce pan. Bring to a boil. Slowly stir in a stream of oat bran, so that it doesn’t become lumpy. Boil for 2 minutes. Take off heat and place lid on the pan to cool down.
Serve cooked bran in a small bowl with fruit and nuts, such as blueberries, raspberries and walnuts or pecans. Drizzle yacon over oat bran, fruit, and nuts to taste. One or more teaspoons of yacon will sweeten nicely with a fruity flavor. You can substitute rice milk with oat or almond milk. This is a filling breakfast and helps keep a body slim and healthy.
