Easter: coconut potica with goji berries

Sometimes it’s hard to separate yourself from proven dishes and recipes, but let’s try something new and allow ourselves to be seduced by the new flavors of coconut potica with goji berries. Yes, goji berries, instead of raisins!

Ingredients (dough):

700 g wholemeal flour
50 g of PlanetBIO coconut oil
300 ml of oat milk
50 g PlanetBIO cocoa powder 
4 tablespoons PlanetBIO coconut sugar + 1 teaspoon yeast
pinch of salt
1 cube of fresh yeast

Ingredients (coconut filling):

400 g coarsely grated coconut flour
50 g of PlanetBIO coconut sugar
300 ml soy or rice cream
50 g of PlanetBIO coconut oil
PlanetBIO goji berries 


Grind the yeast and mix it with a teaspoon of sugar and about half of the oat milk. Leave it for at least 10 minutes to rise (room temperature).

Meanwhile, mix the flour, cocoa powder, salt and coconut sugar and make a hole in the middle. Pour the risen yeast into it and knead the dough by gradually pouring in the remaining oat milk. Add softened or melted coconut oil and knead well. Put the dough in a bowl, cover the bowl with a cloth and leave to rise for at least half an hour.

Stuffing: Melt the coconut oil and mix it with soy cream, coconut flour and sugar.

Once the dough has risen, knead it well again and roll it out on a floured surface. Arrange the coconut filling on it and sprinkle goji berries on top. Roll up the dough with the filling and and put it on a special potica tray, which you previously greased with coconut oil. Pierce the potica several times with a toothpick and bake for about an hour at 180°C.
